Ingredients

  • 2 pounds Chicken thighs
  • 2 tablespoons Olive oil
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon Ground paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Dried parsley
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Butter Optional, use it for an extra layer of richness and flavor.

Instructions

  • Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with foil and place it in the oven as it heats up.
  • In a large bowl, combine olive oil with garlic powder, onion powder, paprika, Italian seasoning, dried parsley, salt, and black pepper to form a paste-like mixture.
  • Add the chicken thighs to the bowl with the seasoning paste. Toss to coat each thigh evenly, ensuring the seasoning is rubbed into the meat.
  • Carefully place the seasoned chicken on the hot baking sheet. If using butter, dot it on top of the thighs.

Baking

  • Bake the chicken for 20 minutes. After this time, baste with the juices from the pan and return to the oven.
  • Bake for an additional 10 minutes, baste the chicken again, and continue baking until the internal temperature reaches 165°F (74°C), about 5 to 15 minutes more.
  • For extra crispiness, finish under the broiler for 1 to 2 minutes, watching closely to avoid burning.

Notes

  • Let the chicken sit at room temperature for 15 minutes before baking for even cooking.
  • Adjust baking time based on chicken size, and consider making extra for leftovers to use in salads and sandwiches.
