1lbGround beef or shredded chickenMain protein source; use 3 cups for chicken.
1Yellow onion, finely diced
1ozTaco seasoning, 1 packet
10ozDiced tomatoes with green chilies, undrained
¼cupBeef broth, chicken broth, or water
1tablespoonCream cheese, softened (optional)
1 ¼cupsCheddar cheese, shredded
1cupBlack beans, drained and rinsed
Instructions
Preheat your oven to 400°F.
Place the taco shells in a casserole dish in a single layer and bake for about 5 minutes to make them extra crunchy.
In a large skillet, cook the ground beef and diced yellow onion over medium heat until the meat is browned and the onion is soft.
Drain any excess grease from the skillet and add taco seasoning, diced tomatoes, and beef broth. Stir well and bring to a boil, then lower the heat and let it simmer for a few minutes.
If using cream cheese, stir it into the mixture until it melts and blends well.
Spoon black beans into each taco shell, fill with the meat mixture, and top with shredded cheddar cheese.
Return filled taco shells to the oven and bake for an additional 7-10 minutes or until the cheese is bubbly and golden. Add your favorite toppings and serve.
Notes
Adjust spice levels by adding jalapeños or hot sauce.
Use fresh onions and quality cheese for better flavor.
Try adding corn or bell peppers for extra texture.
