Delicious and comforting beef enchiladas filled with seasoned ground beef, cheese, and smothered in enchilada sauce, perfect for family dinners or a cozy night in.
In a skillet over medium-high heat, cook the ground beef until it’s fully browned. Drain any excess fat and set the cooked beef aside.
In the same skillet, add a splash of oil and sauté the diced onion until it becomes soft. Add the minced garlic and stir for another 30 seconds until fragrant.
Return the browned beef to the pan. Mix in the taco seasoning, tomato paste, diced green chiles, and water as per the instructions on the taco seasoning packet. Allow the mixture to simmer until the water reduces and flavors meld.
Assembly
Spread ½ cup of enchilada sauce evenly across the bottom of your casserole dish.
Take a tortilla and place ⅓ cup of the beef mixture in the center, followed by ¼ cup of shredded cheese. Tightly roll the tortilla and place it seam-side down in the casserole dish. Repeat with the remaining tortillas.
Pour the remaining enchilada sauce over the top. Sprinkle the leftover cheese generously over the enchiladas.
Cooking
Bake the enchiladas uncovered in a preheated oven at 350°F for about 20 minutes or until the cheese is melted and bubbly.
Remove from oven and serve hot, garnished with your favorite toppings.
Notes
Use fresh ingredients for the best flavor.
Warm the tortillas before assembling to keep them pliable.
You can customize the spice level using mild or hot taco seasoning and additional spices if desired.
