Ingredients

  • 8 ounces Pasta
  • ½ tablespoon Olive Oil
  • 2 pieces Chicken Breasts
  • 1 cup Pesto
  • 1 cup Heavy Cream
  • Salt & Pepper
  • Freshly Grated Parmesan Cheese Optional, to taste for finishing touch.

Instructions

  • Boil a large pot of salted water. Cook the pasta according to the package directions until al dente (about 8-10 minutes). Reserve some pasta water and drain the rest.
  • In a skillet, add the olive oil and bite-size chicken strips. Stir until evenly coated. Sauté over medium-high heat for 3-4 minutes until the chicken is no longer pink inside.
  • Pour the pesto and heavy cream into the skillet with the chicken. Stir well and let it simmer for about 5 minutes to meld the flavors.
  • Add the drained pasta to the skillet and toss together, ensuring the pasta is well coated.
  • Season with salt and pepper to taste, and top with freshly grated Parmesan cheese if desired.

Notes

  • For best results, cook pasta al dente and consider using fresh pesto.
  • Add veggies for extra nutrition, and reserve pasta water for consistency adjustments.
  • Serve immediately for optimal taste.
