Ingredients

  • 2 pounds Beef tips
  • 1 teaspoon Black pepper
  • 2 packages (2.87 oz each) Brown gravy mix
  • 2 cups Beef broth
  • 2 tablespoons Canola or olive oil
  • 1 medium Onion, chopped
  • 3 large cloves Garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 package (1 oz) Onion soup mix
  • 8 ounces Sliced mushrooms
  • 1 can (10.5 oz) Cream of mushroom soup
  • 3 tablespoons Cornstarch (optional)

Instructions

  • Sprinkle black pepper on the beef tips and set them aside. In a bowl, whisk together the beef broth and gravy packets. Set this mixture aside for later use.
  • Set the Instant Pot to sauté mode and add the oil. Once hot, add the beef tips and sauté until browned, which takes about 3-5 minutes.
  • Add the chopped onion to the pot and sauté for 3-4 minutes until softened. Then, add the minced garlic and sauté for another 30 seconds. Turn off the sauté mode when done.
  • Pour in the Worcestershire sauce and add the onion soup mix to the pot. Next, pour in the previously whisked gravy and beef broth mixture.
  • Spread the sliced mushrooms on top of the beef tips. Then, evenly spread the cream of mushroom soup over the mushrooms.
  • Seal the Instant Pot and cook on high pressure for 25 minutes. Ensure the steam valve is set to sealing for proper pressure cooking.
  • After cooking time is up, allow the pot to sit undisturbed for a natural release of 20 minutes. After that, release any remaining pressure carefully.
  • Stir the beef tips and gravy together. If desired, use a cornstarch slurry to thicken the gravy and let the dish rest for 5 minutes before serving.
  • Serve the delicious beef tips over mashed potatoes or egg noodles for a comforting meal.

Notes

  • For best results, ensure your beef tips are room temperature before sautéing, and don't skip the natural release for more tender meat.
  • Leftovers can be used in sandwiches or over rice for a quick meal, and taste even better the next day.
