Ingredients

  • 1.5 pounds Boneless skinless chicken Cut into 1-inch pieces
  • 10 ounces Penne pasta
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 tablespoon Olive oil
  • 3 tablespoons Butter
  • 2 teaspoons Garlic
  • 3 tablespoons Flour
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese
  • 1 cup Sun-dried tomatoes
  • 1 teaspoon Paprika
  • 2 teaspoons Dried Italian seasoning
  • Fresh basil For garnish

Instructions

  • Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  • Season the chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat, add chicken, and cook for 6-8 minutes until no longer pink.
  • Transfer cooked chicken to a plate and set aside to keep it juicy.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in flour to form a roux.
  • Gradually whisk in chicken broth, then add heavy cream and Parmesan cheese, stirring until smooth.
  • Add sun-dried tomatoes, paprika, and Italian seasoning to the sauce and let it simmer to thicken.
  • Combine chicken and drained pasta in the skillet, stirring to coat evenly with the sauce.
  • Garnish with fresh basil leaves and additional Parmesan cheese before serving.

Notes

  • Cut chicken pieces evenly for consistent cooking.
  • Add reserved pasta water for a thinner sauce if needed.
  • Store leftovers in an airtight container for up to 3 days.
