Ingredients

  • 16 oz pasta Use rotini, fusilli, penne, or farfalle for great texture.
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 1 cup fresh basil
  • 5-7 oz store-bought pesto Or use homemade pesto for a richer flavor.
  • Salt, pepper, and lemon juice

Optional Add-Ins

  • ⅓ cup feta cheese
  • Freshly grated parmesan or mozzarella
  • ½ cup favorite add-ins

Instructions

  • In a large pot filled with salted water, cook the pasta according to package directions. Reserve ¼ cup of the pasta water, then drain the pasta and rinse it gently with cool water.
  • Transfer the cooled pasta to a large serving bowl.
  • Gently fold in the cherry tomatoes, fresh spinach, basil, and season with salt and pepper to taste.
  • Pour the homemade or store-bought pesto sauce over the pasta, using reserved pasta water to thin it out if necessary.
  • Fold in any optional add-ins like feta cheese or olives.
  • Gently toss all the ingredients together to combine, adjusting seasoning with more salt, pepper, and lemon juice as needed.
  • Scoop the salad into serving dishes and enjoy it chilled or at room temperature.

Notes

  • Chill the salad for at least 30 minutes for the flavors to meld beautifully.
  • Customize your pesto with nuts or greens.
  • Try adding protein for a heartier meal.
